Male banana, a highly recommended alternative to cereal flours.

The male banana, or green banana, is a much larger variety of banana than we are used to. Her skin is quite thick and green.  

Unlike other bananas, it is not very sweet and contains very few simple sugars.

As it has a lot of starch, it must be consumed cooked in order to digest it well.

Green banana is the main source of carbohydrates in some developing countries where it is consumed as a main course or as a side dish. There are different ways to cook it, you can make breads, grissini sticks, patacones (chopped and fried), chips, bases or dough for example.

In this case, we present an easy and healthy recipe that you will surely like to try.

INGREDIENTS (7-8 units)


  • 1 green banana

  • 1 teaspoon xia seeds

  • 1 teaspoon flax seeds

  • 1 teaspoon sesame seeds

  • 1 teaspoon aquafaba (optional)

  • Grated ginger to taste (optional)

  • Salt and pepper to taste


  • 1 avocado

  • 1 tomato

  • 2 sprigs of parsley

  • olive oil

This recipe can be varied according to your taste, you can add nuts instead of seeds, you can add spices such as oregano, herbs or whatever you like and you can even change the topping. Aquafava, is the excess and reduced liquid of boiling vegetables that helps to curdle the dough, if you do not put it, it also comes out quite well.


Peel a squash, grate it and boil it for about 10 minutes. Once cooked, strain it and let it cool. Meanwhile, peel the avocado and cut it into slices. Take the tomato and wash it well and cut it into cubes. Then grind the seeds or grind in a coffee grinder. When the banana has cooled, put it in a food processor with the seeds, salt and pepper, ginger and aquafaba until it is slightly kneaded. Then spread the dough with a rolling pin leaving it with a thickness of about 3 mm and cut it into rectangular shapes making sure not to break. Then put the griddle on the fire and toast the slices carefully until they are slightly golden. The longer you leave them, the crispier they will be. There is also the option to put them in the oven for 10 min. at 180 degrees. Then remove them from the heat and let them cool. Finally place the avocado, the tomato and a little parsley to decorate and season well with olive oil.
